Gabriel makes chopping feel comfortable. This Nakiri style is a top-rated Japanese-style vegetable knife. It's a stunning blade that is comfortable on the chopping board.

A double bevel edge and thin blade make Gabriel incredible for chopping and dicing vegetables. It's also great to use on boneless meats as well.
Gabriel provides a little more clearance for the knuckles of your knife hand when cutting. The surface helps guide the blade down the knuckles when tap chopping, push or pull cutting. Scraping your vegetables together off the board is also easy with the extra blade surface. Gabriel is a stunning knife that complements our Handyman, Ezekiel, The One & Tom Petty perfectly.

Steel Details

Made with a 52100 high-carbon steel, with around 1.0% carbon and 1.4% chromium. Heat-treated to around 62 HRC, it offers excellent edge retention, strength, and cutting performance. It builds character over time and rewards simple care with a sharper, longer-lasting knife.

Decent, but not everything I hoped

I was really excited to get this knife and was really expecting I would love it. Unfortunately, it's just not living up to everything I wanted it to be. First of all, I didn't find it as sharp as I was expecting out of the box. I bought an Ezekiel in the same order and that was razor sharp. But my Gabriel felt more dull when chopping vegetables. Secondly, the blade is slightly curved, to facilitate rock cutting. However if you're just going straight up and down, this results in a little gap between the knife and the chopping board at the top end of the knife. When cutting spring onions, or slicing cucumbers, I found this meant that I didn't cut all the way through the vegetable, unless I used a rocking motion to get all of the way through, or did my chopping closer to the base of the knife, where the edge is flatter. I suppose it's just a bit of a learning curve and adjusting my style of chopping, but after almost a month of using this knife, I haven't been able to get used to it yet. I think I'd prefer it if it had less of a curve and a less rounded tip.

Being Nz made was the selling point.
On receiving my knife it was exactly what I was after. It also turned up to my door faster than I expected.
Good looking knife however as a steel worker I can appreciate good steel and it’s good steel for sure!
I’ll be filling up my knife roll with these knives over the next few months!
