It’s ideal for everything from trimming silver skin off meat to prepping fruit, herbs, or garlic. The slim blade helps you move with detail and accuracy, and the lightweight makes it easy to handle for long prep sessions.
If your big knife is the workhorse, Jonathan is the scalpel. Focused, sharp, and always ready when the details matter.

Lovely knife - Jonathan

Bit longer than we first anticipated but brilliant. Lovely and light and of course very sharp. Can see it becoming a go to. Compliments our other 3 C&A knives perfectly. All look great on the mag rack.

Common Questions

What Is Carbon Steel?

Carbon steel is a type of metal made mostly from iron and a small amount of carbon. That carbon makes the steel harder, which means it can be sharpened to a very fine edge and stay sharp for longer. It's not stainless, so it can rust if left wet. With simple care, it lasts a long time and cuts really well. That’s why carbon steel is often used in high-quality knives.
