How Each Knife Is Crafted

Forged Carbon Steel

Every knife starts as a bar of high carbon steel, its roughly shaped then heated in a coal forge and shaped under a power hammer by hand. No CNC, no laser cutting. Each blade is forged individually.

Heat-Treated for Performance

Each blade is differentially heat-treated to bring out the best in the steel. The edge is hardened for sharpness and retention, while the spine stays softer so it flexes under pressure instead of snapping.

Handcrafted Handle

Each handle is carved from padauk and hand-planed until there are no rigid edges left. Sealed with shellac and glued to the tang, so blade and wood sit as one solid piece. No two handles come out the same.

Sharpened by Hand

Every blade is hand-ground to form the edge, then refined on a whetstone for a polished, clean cut. Ready to use straight out of the box.

Is Thomas big enough to be my only knife?

No, and it isn't meant to be. At 13cm it's built for the small jobs. If you're buying one knife to do everything, that's Adam. Thomas is the one you'll reach for beside it, for garlic, herbs, fruit and trimming meat.

Thomas or Jonathan? What's the difference?

Jonathan is a paring knife, made for in-hand work like peeling and coring. Thomas has a much wider blade at 36mm, so your knuckles clear the board and you can actually chop with it. If you want a small knife for board work, it's Thomas.

What is carbon steel?

Steel without the chromium that makes stainless stainless. It takes a sharper edge, holds it longer, and sharpens back up in minutes. The trade-off is that it'll rust if you leave it wet, and it darkens over time into a patina. Dry it after use and you're fine.

How do I care for it?

Wash and dry it right after use. Never the dishwasher. If it's going in a drawer for a few weeks, wipe it with mineral oil first. It'll go grey and blotchy in the first month, and that's the patina forming. It's protecting the blade, not ruining it.

Does it come sharp?

Yes. Every blade is hand ground and finished on a whetstone before it leaves the workshop, so it's ready to use out of the box.

What Type Of Wood Is The Handle?

Padauk. Padauk is a strong hardwood known for its rich colour and toughness. It has a natural reddish tone that darkens beautifully over time. Because it’s dense and durable, Padauk makes a great knife handle. It holds up to everyday use, feels solid in your hand, and looks better the more you use it. It’s a mix of strength, beauty, and comfort.

Our 2-year warranty covers defects in materials and workmanship. It excludes rust or damage from neglect. Claims are inspected case-by-case, and replacements are issued if the product is genuinely faulty.
