Before you buy anything, the carbon steel bit.
These aren't stainless. For the first few weeks a new blade will mark onions and tomatoes slightly grey, and it'll rust if you leave it wet. Neither is a fault. Wash it, dry it, put it away dry, and you'll never have a problem. Most people find that out after they buy. We'd rather you knew now.
