Why These Two Knives Together?
Adam - 21cm Santoku
Adam's the big one & the one you'll use most nights. 21cm with a curved edge you can rock straight through an onion, and enough blade height that your knuckles clear the board.
Thomas - 13cm Tall Petty
Thomas does everything Adam's too big for. Garlic, herbs, trimming the fat off a steak. It's short but it's tall, so you can still work on a board instead of holding everything in your hand.
How Each Knife Is Crafted

Forged Carbon Steel
Every knife starts as a bar of high carbon steel, its roughly shaped then heated in a coal forge and shaped under a power hammer by hand. No CNC, no laser cutting. Each blade is forged individually.

Heat-Treated for Performance
Each blade is differentially heat-treated to bring out the best in the steel. The edge is hardened for sharpness and retention, while the spine stays softer so it flexes under pressure instead of snapping.

Handcrafted Handle
Each handle is carved from padauk and hand planed until there are no rigid edges left. Sealed with shellac and glued to the tang, so blade and wood sit as one solid piece. No two handles are the same.

Sharpened by Hand
Every blade is hand-ground to form the edge, then refined on a whetstone for a polished, clean cut. Ready to use straight out of the box.

What Is Carbon Steel?
Carbon steel is a type of metal made mostly from iron and a small amount of carbon. That carbon makes the steel harder, which means it can be sharpened to a very fine edge and stay sharp for longer. It's not stainless, so it can rust if left wet. With simple care, it lasts a long time and cuts really well. That’s why carbon steel is often used in high-quality knives.
Why these two knives?
Between them they cover almost everything. Adam's the 21cm one that does the volume work, Thomas is 13cm and handles the fiddly stuff. Nearly everything you do on a board falls into one of those two camps, and what doesn't is a specialist knife you probably don't need yet.
How Do I Care For Them?
Hand wash, dry straight away, don't put it in the dishwasher. If you're not using it for a while, a light coat of oil keeps it happy. More Here

Like all our knives, it's hand crafted in Vietnam by a skilled blacksmith.We documented the full process here.
Is two knives actually enough?
For most people, yes. I'd rather you had two you reach for every day than a block of eight where five sit there going blunt. If you find a gap later, that's what the rest of the range is for.
Is it cheaper than buying them separately?
Yes. Adam's $190 on his own and Thomas is $120, so you're ahead before you've even counted the oil.
How Does Your 2 Year Warranty Work?
Our 2-year warranty covers defects in materials and workmanship. It excludes rust or damage from neglect. Claims are inspected case-by-case, and replacements are issued if the product is genuinely faulty.

Is the mineral oil included?
It is, it's in the box. We sell it separately alongside the single knives, but most people buying this set are new to carbon steel & the oil is the single easiest thing you can do to look after it. Didn't feel right making you add it yourself.
