With a 35mm blade width, Jericho has the right amount of blade area to still easily maneuver bone when needed to keep your slice consistent. It isn't just for meat. Jericho makes light work of shaving cabbage down and is still light enough to hold off the board to slice vegetables and cut down a wheel of Brie for a charcuterie.
