Gabriel is made for vegetables. Inspired by the traditional Japanese Nakiri, this knife was designed for speed, precision, and simplicity when prepping plant-based ingredients.
The wide, flat 17 cm blade makes straight, clean cuts. Perfect for everything from shredding cabbage to slicing kumara or chopping fresh herbs. Unlike a curved chef’s knife, Gabriel’s edge stays flat against the board, helping you work faster and more evenly.
Originally developed in Japan as a home cook’s go-to vegetable knife, the Nakiri shape is all about rhythm and efficiency. Gabriel carries that same energy into modern kitchens. Whether you’re prepping meals for the week or cooking something fresh from the garden.

Steel Details

Made with a 52100 high-carbon steel, with around 1.0% carbon and 1.4% chromium. Heat-treated to around 62 HRC, it offers excellent edge retention, strength, and cutting performance. It builds character over time and rewards simple care with a sharper, longer-lasting knife.

Care Instructions
