About Our Hammered Steel
Every Blade Is Unique
One strike at a time, by hand. Which is why the pattern on your blade exists exactly once, and catches the light differently to every other knife we've made.
Those dimples earn their place too. They break the suction between the steel and whatever you're cutting, so potato and cucumber fall away instead of stacking up on the blade.
Carbon steel doesn't sit still. Blues and browns come up across the hammered face over the first few months as the patina builds. Most knives look their best on the shelf. These look their best after a year in your kitchen.
How Each Knife Is Crafted

Forged Carbon Steel
Every knife starts as a bar of high carbon steel, its roughly shaped then heated in a coal forge and shaped under a power hammer by hand. No CNC, no laser cutting. Each blade is forged individually.

Heat-Treated for Performance
Each blade is differentially heat-treated to bring out the best in the steel. The edge is hardened for sharpness and retention, while the spine stays softer so it flexes under pressure instead of snapping.

Handcrafted Handle
Each handle is carved from padauk and hand planed until there are no rigid edges left. Sealed with shellac and glued to the tang, so blade and wood sit as one solid piece. No two handles are the same.

Sharpened by Hand
Every blade is hand-ground to form the edge, then refined on a whetstone for a polished, clean cut. Ready to use straight out of the box.

Common Questions
Will they rust?
Only if you let them. Carbon steel and standing water don't get along, so wash it, dry it, put it away. That's the whole routine and it takes about eight seconds. Leave it wet in the sink overnight and you'll have spots by morning.
Is Noah for bones?
NO! Noah is a vegetable cleaver and is made for chopping vegetables and large root vegetable. Its also very nimble and makes light work of onion & garlic.
What's the patina I keep reading about?
The colour that comes up on the blade as you use it. Blues, browns, sometimes a grey. It's not damage, it's a protective layer that forms on carbon steel, and it's why your knife ends up looking like nobody else's. The mineral oil in the box helps it along
Can they go in the dishwasher?
No. Heat, detergent and a long wet cycle is the fastest way to ruin a carbon steel blade and a wooden handle.
Do I really need both?
They do opposite jobs. Zion is 210g with a 60mm-wide blade, built to go through chicken joints and pumpkin. Eve is 65g and 30mm wide, for citrus, herbs and anything fiddly. Most people find they reach for Eve daily and Zion a couple of times a week.
Is Zion too big for everyday use?
It's a substantial knife, 340mm end to end. That weight is the point, it does the work for you on hard veg and bone. If you want one knife for everything, it isn't this one, which is why we've paired it with Eve.
Are they sharp out of the box?
Yes, hand-sharpened on a whetstone before they ship. You won't need to touch them for months of normal home use.
Are the sheaths included?
No, they're a separate add-on. Worth it if the knives are going in a drawer rather than on a magnetic strip.
Where are they made?
Handcrafted in Vietnam, by hand, one blade at a time.
