Ezra is a 20 cm tall Bunka with a hand-hammered blade, black ebony handle and a brass bolster.

Ezra is crafted for someone who wants a comfortable knife to use every day. Plenty of knuckle clearance, and plenty of blade to go with it.
At 55mm from edge to spine your hand sits high above the board, so you stay comfortable right through a big prep session. At 200mm there's enough knife to break down a cabbage, portion a chicken, or work through a pile of onions on the one blade.
The flat Bunka edge suits a push and pull motion, meeting the board along its full length so every cut comes away clean. The angled tip takes care of the close work.
Hammered by hand, one dimple at a time, so food releases cleanly off the steel and every blade carries its own character. Black ebony handle with a brass bolster at the join, dense enough to sit the balance back in your hand. Carbon steel that takes a fine edge and gets better with use.
Ezra was the scribe. The one who kept the records straight. Felt like the right name for a knife built around a straight edge.

How Each Knife Is Crafted

Forged Carbon Steel

Every knife starts as a bar of high carbon steel, its roughly shaped then heated in a coal forge and shaped under a power hammer by hand. No CNC, no laser cutting. Each blade is forged individually.

Heat-Treated for Performance

Each blade is differentially heat-treated to bring out the best in the steel. The edge is hardened for sharpness and retention, while the spine stays softer so it flexes under pressure instead of snapping.

Handcrafted Handle

Sharpened by Hand

What Is Carbon Steel?

How Do I Care For It?

What's The Dark Finish On The Blade?

It's forge scale and its called a kurouchi finish in traditional knife making. A natural layer that forms when the blade is heated during heat treatment. It's not a coating, it won't chip off, and it helps reduce food sticking to the blade.

What Type Of Wood Is The Handle?

Padauk. Padauk is a strong hardwood known for its rich colour and toughness. It has a natural reddish tone that darkens beautifully over time. Because it’s dense and durable, Padauk makes a great knife handle. It holds up to everyday use, feels solid in your hand, and looks better the more you use it. It’s a mix of strength, beauty, and comfort.
